I’ve been on a Pita Oat Bran sandwich obsession as of two weeks in a row! -Someone help me! They’re just too good!- They really are actually! But what’s best about this bread is how you can use for soooo many uses of a meal and how healthy it is for you.

Here are a few recipes that I came up with while having my Pita bread sandwich craving.

Ham, Havarti, Cucumber Pita Sandwich with Salad-

Ingredients:

  • Fresh deli ham, 4 deli cuts of it
  • 2 scallion stalks, chopped fine
  • 2 Cucumbers, small or one large
  • 1 tomato
  • 1 green pepper
  • 2 slices of havarti cheese
  • 1 loaf of pita bread, cut in half

Preparation:

In a small skillet pan, pour 2 tbsp of olive oil, on low heat. Julienne the green bell pepper (after it’s been washed), and do the same with the deli ham. Sautè bell peppers, when starting to soften an brown softly, add ham and finely chopped scallions. Cook until ham begins to gain some color and bell pepper is tender.

Take the halve of the oat bran pita, put in havarti and the hot filling (ham, bell pepper, scallions). Slice cucumbers and add as final filling to the pita sandwich. You’ll have some left over, which is where the tomato comes into play, set extra cucumber aside and slice tomato. Plate and add a bit of Balsamic Vinegar to tomato and cucumber. Enjoy with pita sandwich.
