Today, September 10, is the birthday of my little sister Liza (well, she’s turning 17, so.. an old lady now I suppose) haha, no not really, but my have the years passed. Although, she still acts as though she were in here freshman year/transition into sophomore year phase. Yeah, I guess a lot of kids go through that now and yet I never did. I suppose it depends on just when you were born and raised. Total difference there. But today, being my sweet sisters birthday, I wanted to make her a lovely cake (as I will for all of them as always until I fatten them up).

The cake I made was a simple chocolate cake with a vanilla buttercream frosting, but I experimented with making that buttercream since it’s a very sweet buttercream frosting (too sweet for my taste actually) but everyone enjoyed it all as did she which is most important! ^,.,^

But after baking/preparing the frosting/decorating the cake for 6 hours (yeah it took that long) it’s time for this tired goth to crawl into bed and slip away to dreamland, but I have to finish- ZzZzzzZ….

Simple Chocolate Cake-

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp. vanilla extract
  • 1 cup hot water or coffee

Preparation:

Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius). Butter 2 (9″) cake pans and flour them. Tap out the excess flour.

Mix dry ingredients in a medium mixing bowl. Add eggs, milk, vegetable oil. Mix well. Add vanilla extract. Mix slow during this process. Add hot water or coffee, mix well.

Bake for 30-35 minutes. Let cool for 2 hours (YES, two hours). Then frost with whichever buttercream/frosting of choice, decorate how you want and time to devour!
