So todays menu for a “late breakfast” (this could also be eaten during the lunch hour) is a Mushroom, Parsley Fritata with homemade Honey Corn Muffin.

 

Mushroom Parsley Fritata-

Ingredients:
  • 4 eggs
  • 5 or 6 whole baby bella mushrooms, stem attached (They come packed in about 6 oz packet)
  • 4-5 sprigs parsley, I like them nice full so I can chop them fine
  • 1 onion, finely chopped
  • salt and finely ground black pepper
  • garlic powder
  • olive oil

Directions:

Set aside eggs in medium mixing bowl. First, get or mise en place together. Give the mushrooms a good rinse, but be careful since mushrooms suck up a lot of water. Place them on a paper towel and rinse the parsley and peel onion. You’ll need a frying pan, or regular skillet. (Depending how much you’re making)

On a cutting board, cut stems off the mushrooms. You can take the gills out or leave them, it won’t kill you. -,.,- Finely chop mushrooms, but not too fine. You don’t them to shrival up before you get any of the rest of the ingredinets in there. Gently dry parsley and then pluck the leaves off the stems. Stack the leaves on top of eachother and begin to chop until fine. Cut off both ends of the onion. Cut in half and then chop fine as well.

In a frying pan, with a bit of olive oil place in onions,mushrooms and parsley. Cook on medium heat until onions turn a light golden color. Season with garlic powder and a bit of salt. While that is happening, wisk eggs with salt and pepper, for taste, and then add in the cooked veggies into the wisked eggs and mix in together. Then place once again, in a lightly coated frying, and let it cook. If it looks a little golden brown on the bottom, THAT’S OKAY. It’s supposed to. That means it’s time to flip. Then simply serve.

Honey Cornbread Muffin-

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp salt

Mix together

Wet Ingredients:

  • 2 eggs
  • 1 cup milk
  • 1/4 cup honey
  • 1/4 cup butter (you’re going to heat the butter and add it after all is combined, dry and wet ingredients)

Prefeat oven for 400 degrees Fahrenheit. Bake for 16 minutes.
